Latency is the time it takes for data to pass from point A (eg; your device) on a network to point B (eg; a gaming server). In respect to gaming, latency (typically measured in milliseconds), is the time it takes for data to reach the gaming server and make a round trip.
The delay or time it takes for data to move between points is known as lag. By reducing the time for information to travel between points, you can react or respond to incoming information faster. In terms of gaming, it may be the difference between you getting the edge over an opponent.
Speed is a measure of bandwidth which is the amount of data a device can download or upload at any given time. Latency on the other hand measures how quickly your device can communicate with other services on a network. Ideally you want low latency and inversely high bandwidth.
